for example sarah is fox's master so it does smt like that Fox(NinjaSarah) ^^

For Padawans - Jedi Adepts, the (name) shows their Master's name so it's easily identifiable so no crazy whackjob is saying that so-and-so can take their trial, whenver anybody is their master, not crazy whackjob.

For Jedi Knights and above, you can have two sets of ()'s. The first set has the (saber) which shows what saber style(s) they can teach. After that, you have the (number) which is how many Padawans that person can take. For Jedi Knights and Guardians, the max they can have is one. Jedi Masters and above can have two.

Now, Jedi Knights and above are the only ones who can take Padawans, so, if you only see the (saber) and not the (number,) then you can safely assume that that person is already fully, is inactive, or is not wishing to take any Padawans at all at this time.

The first saber exame is easier (cough) than a masters exam. Thus, it would seem reasonable to take the first one in a saber Im less skilled in, and the masters (when I get there) in the one I am better at?
